Copycat Recipe - Chicken Bryan from Carrabba's!

Hey everyone!  Today I'm going to share one of my all-time favorite recipes: Chicken Bryan from Carrabba's.  If you've never had it your in for a treat.  It's a grilled chicken breast topped with tangy goat cheese, sun-dried tomatoes, and basil with a lemony butter sauce.  I hope you enjoy!!

Here's the video tutorial- ingredients and measurements are at the bottom of the post.


Ingredients for the sauce:

1 tablespoon minced garlic
1 tablespoon minced yellow onion
5 tablespoons of butter (chilled- I freeze mine for about an hour before I make this)
1/2 cup of white wine
1/4 cup lemon juice (or the juice of one lemon)
1/2 cup sun dried tomatoes
1/4 cup basil (about ten leaves)
salt and pepper
Olive Oil, for sauteing

For the chicken you will need:

2 chicken breast (boneless and skinless)
2 tablespoons of cooking oil
4 ounces goat cheese
salt and pepper

CVS and Publix Hauls! May 14, 2014

I Hi everyone! I went shopping last night at CVS and Publix and want to share some of the great deals that I scored with you guys!

CVS:

There's two really good deals going right now- Purex Detergent is buy one get two free. This was awesome as we are totally out and I needed to stock up. I was able to get 3 bottles for $6.29!

The next deal happening this week is Neutrogena- buy 3 face care products earn 10 ECB's. As I mentioned before hubby is super picky on his products so this was the perfect time to stock up on his face lotion. Here's the scenario:

Face lotion x 2 @ $7.99- $15.98
Bar soap - $3.19
Detergent- $6.29
= $25.46
- $3/2 Neutrogena sun care CVS coupon (was on a tear pad in the cosmetics section. I wasn't sure if it would work but the lotion is SPF 20 and it went through fine)
- 2 x 10 ECB's 
=$2.46 + tax 
$3.34 OOP

Earn 10 ECB's for the Neutrogena and 5 ECB's for hitting $50 in the Beauty Club.


Next stop was Publix. I had to pick up a few things for the week but I want to mention a really great freebie you can score! There's a coupon in the Mother's Day green flyer for BOGO Bush's Cocina Latina beans. There's also a manufacturers coupon for the same thing- meaning you can get them for FREE! 
I hopped on EBay and got 10 coupons for just a few dollars. Last night I picked up 10 cans using 5 each of the Publix and manufacturers coupons, and still have 10 cans to go. This deal runs until May 23 so there's still time if you're interested!

Great day at Publix! Axe Products, Clear Hair and Scalp, and Saran Wrap!

Today was a totally awesome day at Publix! We've really been needing to stock up on household items and toiletries, and my hubby is super picky about which brands he will use. For styling his hair he will only use Axe styling paste. I've been searching for a deal on this stuff for months and finally a great one came along! 

Normally he pays between $6-$8 for a jar of this stuff. This week they had it on sale for $5.99, and there was a store coupon for $2 off 2. I did a quick search on eBay and found manufacturers coupons for $2.50 off one which I could combine with the store coupon to get them at a stock up price. Here's the math:

2 Axe styling products @ $5.99 = $11.98
- $2/2 Publix coupon
- $2.50 off 1 manufacturers coupon x 2
= $4.48 for 2 or $2.24 each!

I bought 6 but I have a few more coupons so I may go back and buy a few more.

The next deal was the Axe body wash. These were on sale for $3.99 and I used the same coupons and the same math:

2 Axe body washes @ $3.99 each = $7.98

- $2/2 Publix coupon
- 2 x $2.50/1 manufacturers coupon 
= $.98 or $.49 each! Great deal!

The Clear Hair and Scalp shampoo is another brand that my hubby will use and also happened to be a good deal. I actually needed Shampoo and conditioner myself so I split this up between us - 5 bottles each. It was normally priced $4.99 a bottle but there was a Publix coupon that made it much less. Here's the math:

$4.99 x 10 = $49.99
- 10 x $1.50/1 Publix coupons
- 10 x $2.00/1 Manufactuers coupons
=$14.99 for 10 or $1.49 each

My favorite deal of the day was the Glad Wrap- each one was only 4 cents! :) The Manufactuers coupon was a printable so I only had two, but here's how it went:

2 x Glad Wrap @ $1.79 = $3.58
- 2 x $1 Manufactuers coupon
- 2 x $.75 Publix coupons 
= $.8 - winning! :)

Today's trip left me with several months worth of products we need and $99.42 to transfer into savings!

Great day at CVS!

I haven't been couponing at CVS the past few months because we were so busy with the wedding. Now were back, married, and happy to report a great shopping trip today! I only had $1.50 in ECB's to start with (my quarterly earnings) and I was able to score some great deals on things we needed. Here's the breakdown:

Transaction #1:

2 scope to go 4 packs @ $2.49 each
(These are part of an oral-b deal from this weeks ad where you earn 3 ECB's for each product. These happened to be included making them a $.51 money maker!
 
Total- (after tax and my $1.50 ECB) = $3.73

Earn 6 ECB's

Transaction #2:

1 Oral B 3D white electric toothbrush -$21.49

- $6 ECB's
- $4 coupon from CVS's website
Total (including tax)= $13.00

Earn 15 ECB's

Transaction #3

1 Physicians Formula bronzer - $13.79
1 physicians Formula concealer- $7.79

- 15 ECB's
- $3 cosmetics coupon that printed from the coupon machine

= $5.10 (including tax) 

Earn 10 ECB's 

Overall, I spent $21.93, saved $29.50, and earned $10 for next time. I invested a bit more than I normally would, but I had to in order to get started again. (Plus I really needed the bronzer).

Butt Massage Chicken

As promised, here's post number two about using what we've got on hand to make dinner. Tonight's special: Butt Massage Chicken, black bean burgers, and a random knish (did I spell that right?), all grilled up by my handsome guy.

By now you may be asking yourself "what the (insert four letter word) is Butt Massage Chicken?". I hate to even say, only because I know you all will think I've for some creepy obsession with the Lady herself, Paula Deen.

I don't.

But I do like her....a lot. :)

Paula is dear to my heart. Like me, she's from Georgia, though her town is easier to pronounce (I'm from Hephzibah- say that three times fast ha!). Like me, she's got a love for food and family. And very much like me, she's a hoot and a half. :)

For Christmas my awesome dad and stepmom sent me a bottle of her "Butt Massage", essentially a sweet and spicy BBQ rub. It's divine.

Tonight I used it to create a marinade for the chicken breasts I had in the freezer from the last sale. It came out great. Here's what I did:

1/2 cup BBQ sauce
1/2 cup fat free Italian dressing
1 tsp liquid smoke
2-3 tbs Paula Deen Butt Massage seasoning

Combine all ingredients- marinade chicken for 30 minutes. Grill until done.

The chicken was spicy, smoky and sweet- perfect for our al fresco pool side dinner. I'm looking forward to leftovers on a green salad for lunch tomorrow. :)

Snorkeling with sharks and tilapia tacos

We're going on vacation in 18 days. It's going to be 7 fabulous days of fun in the sun in the Western Caribbean. If you've been following me for a while you probably know that while I try to live frugally throughout the rest of the year, I really tighten the reigns before vacations and try to save as much as possible.

One thing I love to do is go through my pantry and freezer and plan meals based only what I have on hand. It's pretty easy at first but gets a little tougher as the time goes by. On tonight's menu: tilapia tacos with cantaloupe salsa. Normally I'd have used mango or some tropical fruit, but I have to say the cantaloupe was delicious. Here's the recipe:

Cantaloupe Salsa:

1 small onion (about 5 tbs diced)
1/2 large tomato
1 jalapeño, seeded
1 cup of cantaloupe
2-3 tbs lime juice (I used the stuff in the squeeze bottle- shameful, I know)
Salt & pepper

Finely dice all of the veggies and cantaloupe. Add lime juice, salt, and pepper, marinate in the fridge until ready to use.

I saw Paula Deen say the other day that she loves salt and pepper on melon. I can totally see why. Seriously try this salsa- the combo of sweet and spicy was amazing.

I simply sautéed the tilapia with lemon pepper and blackened seasoning, and served everything with tortillas, black beans and a little sour cream. Enjoy!

I'm going to try to post the new things I come up with every night. It will help me keep from obsessing about my vacation. And about snorkeling with sharks. :)
